A good, old fashioned boiled dinner! This brings warm family dinners at my Grandparents house to mind.
(Four servings)
4 carrots
2 onions, halved
2 potatoes, quartered if large; halved is medium
1 rutabaga
1 parsnip (if you have one)
4 peppercorns
Place in large Dutch oven, cover with water.
1# ham cut into 4 serving portions
small head of cabbage, cut into small wedges
Boil til done (an hour??). Allow ham and cabbage to steam, rather than be submerged in water and boil. Serve portions of each food on a plate or pasta bowl. Dice food, and sprinkle with 1-2 teaspoons of vinegar. Salt and pepper to taste. Enjoy!
Best if made a day or two in advance to allow flavors to blend and mellow.
You can add more of less of the above vegetables to suit your tastes.
