3-4 chicken breasts cut into strips
½ an Onion, chopped
1-2 cloves minced garlic
2 + cups cheddar cheese
1 Jar of Salsa (such as Pace)
2-3 teaspoons cumin
4 oz cream cheese
Tortillas – about 8-12
Sour cream
In a skillet, cook chicken breast. Add onion and garlic to cooked chicken.
Sprinkle some cheddar cheese, 3-4 Tbsp. salsa, 2-3 teaspoons cumin (more if you like it spicy) and cream cheese.
Mix together until melted.
Spoon the mixture into tortillas. Roll and place in baking dish. Cover with remaining salsa and cheese.
Bake uncovered at 350° F. for 20 – 30 minutes. Serve with sour cream.
Recommendations for sides: Mexican Rice, Re-fried Beans, and/or corn bread.
