German Potato Salad

Lillian shared this recipe for Stacy's cookbook. I haven't tried it yet, but I fail miserably with potato salad - so maybe this will be my next (successful?) attempt!

6 cups potatoes
1 small chopped onion
½ cup chopped celery
salt and pepper
1 ½ cups water
1/3 cup vinegar
6 slices bacon
1/3 cup bacon grease
3 Tbsp flour
1/3 cup sugar

Peel and slice thin 6 cups potatoes that have been cooked in their skins. Sprinkle each layer with a little salt and pepper. Dice bacon and fry until crisp and remove from pan. In 1/3 cup bacon fat sauté the onion and celery but do not brown and take out and put over potatoes. Stir into the fat, flour and sugar and mix well. Gradually stir in water then vinegar. Cook a few minutes until mixture thickens. Pour over potatoes, add bacon and stir lightly. Cover and keep warm until ready to serve.
