Jan’s Meatballs

Jan, RIP, made these wonderful meatballs for our rehearsal dinner. She was a lovely, generous person, and I hope that you have an opportunity to try and enjoy these!

½ lb each of beef, veal, and pork
2 eggs, beaten
1 teaspoon salt
¼ teaspoon pepper
¼ teaspoon oregano
½ cup grated parmesan cheese
2 tablespoons grated lemon rind
¼ cup fine bread crumbs

Combine all ingredients and mix thoroughly. Shape into balls. Brown and drain. Add to sauce.
