Here is my recipe for Mushroom Pie. I like it because it is an unusual dish and an elegant accompaniment for beef, especially prime rib. I used to serve it for dinner parties in the 70's (yes, I did lots of dinner parties!) and in the last few years have started using it again when I entertain, particularly during the holidays. I served it for Christmas with prime rib and it was quite a hit. It is rich, does require some time, but is quite delicious and worth the effort.

Melt 4 T. butter in large skillet
Sauté 2# washed mushrooms.
Add salt pepper, 1T lemon juice. Cover, cook over low heat 10 minutes.
Shake to stir.
Arrange in buttered 10" pan.
To remaining juice add 2 T. flour, 1/2 C. whipping cream, 1/2 c. Madeira wine.
Pour over mushrooms.
Prepare crust:
2-1/2 C. flour
3/4 t. baking powder
1/2 c. cold lard
1/2 c. butter
6-7 T. cold milk
Roll between sheets of waxed paper. Cover mushrooms. Bake at 450 for
15 minutes. Reduce heat to 350 and bake for 15 minutes longer.
Enjoy with a lovely prime rib, horseradish cream condiment, tossed salad, rolls and a healthy vegetable (something has to be healthy in this menu :-). Dessert was usually Christmas cookies, since this was served at many a Christmas Eve/Christmas Day dinner at the various Gordon homes. Bon Appetit!
