Pot Roast

Bless her heart - my mom thought I could just make pot roast without a recipe. I finally finagled this one out of her!

4-5# beef roast

2 Tbsp oil

2 Tbsp butter

1 onion, sliced.

Brown for 25 minutes – turn often.

1 tsp. salt

1 tsp. thyme

1 tsp. marjoram

1 bay leaf

8 peppercorns

10 ½ oz can beef boullion

Simmer 2 ½ hours

Add 12 pearl onions and 1 lb carrots.

Simmer 30 – 45 minutes

Gravy: 2 cups broth and 3 Tbsp flour. Cook 3 minuts.
