Rice Pudding

My mother-in-law Barb makes this for gatherings - it's really her signature dish! I've never actually made it because... well, I've never had to. She does :) We top it with lingonberry jam/

In a sauce pan, bring to a boil, do not allow to boil over.
2/3 cup Minute rice
3 cup whole milk (or 2 ½ cup whole milk and 1 cup 2%)

Remove from heat

In a casserole, mix together:
5 slightly beaten eggs
2/3 cups sugar


Add 1 teaspoon vanilla extract to casserole. Slowly add hot rice mixture to casserole. Place in a pan of hot water. Bake in 425° oven about 1 hour, or until done. Stir about every 15 minutes during baking.
