Creamy Sweet Potato Soup (by Dannon)

I needed just a 1/2 cup of plain yogurt for a recipe I made (this herb dip) - and Ted couldn't find just a small amount, so he bought the bigger container. It had this recipe on the foil - and it looked so yummy that I had to try it. It is AMAZINGLY delicious!! I hope you try it -it's so worth it, and pretty fast, too! As a note, I didn't have any parsley or cilantro, or pumpkin seeds for garnish, but it was delish without. Madeleine could NOT get enough of this - she kept on saying "Yuuuuum" "mmmmm" and when we were done, she wanted more, and then ate a whole second bowl!

Creamy Sweet Potato Soup (12 servings)
  • 2 Tbsp Canola Oil
  • 1 large sweet onion, sliced
  • 2 tsp ground cumin
  • 3 sweet potatoes, peeled and cubed
  • 1 1/2 qt chicken broth
  • 1 3/4 Dannon All Natural Plain Yogurt
  • 2 Tbsp chopped parsley or cilantro
  • 1/4 cup toasted pumpkin seeds
In a soup pot, heat oil. Add onions and cumin and saute 3-4 minutes. Add potatoes and chicken broth and bring to a boil. Reduce heat and simmer soup 20-25 minutes. Puree soup with 1 1/2 cups Dannon Plain Yogurt and parsley or cilantro. Serve each portion of soup with a dollop of remaining yogurt and a sprinkle of pumpkin seeds.

  1. I have this exact recipe (foil) stiing in front of me on my desk. I am a big fan of plain yogurt and always use it in place of mayo in recipes since I'm allergic...this is the first recipe I've actually saved from a container. Now that I KNOW it was delicious, I'm going to have to take it home and make it! Thanks for testing it out for me!!!
