Crab Roll-Up Appetizer

This recipe comes courtesy of my cousin Jeryn... who also contributed "Asp-Eric A-Strada" ... pretty good for someone who dubs herself as "Betty Crock-o-Shit" for her lack of culinary skills! I think she's going to need a new nickname soon! We ate these at my folks house Easter weekend (2010) and they were really fantastic! It makes a lot, though, so if you're feeding six or less, probably best to halve the recipe.


Crab Roll-Up Appetizer

1# crab (the fake stuff)
2 8-oz pkgs. cream cheese
1/4 c. mayonnaise
3 scallions, sliced (I used 6, but they were small and worked out fine)
1/4 c. chopped red pepper
1 c. shredded cheddar cheese (I'm sure you can use almost any cheese, e.g. swiss, asiago,etc.)
8 large tortillas (you could try tomato or spinach tortillas for color. Don't use whole wheat or low carb; they're too dry/not flexible enough to roll)

Mix, spread, roll. Use waxed paper to hold rolls together. Chill at least one hour. Slice and enjoy :-)
