My co-worker made these cookies from Gooseberry Patch's "Our Favorite Cheap and Easy Recipes" book, and they were great! She topped hers with a toffee-chip chocolate bit and it added a really nice touch. I think the title is pretty descriptive, as you need about five ingredients and 30 minutes to whip these babies out!
No-Flour Peanut Butter Cookies
1 egg, beaten
1 c. sugar
1 t. baking soda
1 c. crunch peanut butter
1 t. vanilla extract
Combine all ingredients; roll into 24 balls. Bake at 350 degrees on a lightly greased baking sheet for 10-12 minutes.
