Roasted Pears with Orange-Caramel Sauce

I made this tonight and it was fantastic! I got it out of my Weight Watchers five ingredient, 15 minute recipes magazine (winter 2013).

It's 4 Points Plus per service, prep: 8 minutes, cook: 35 minutes

  • 2 Firm, ripe bosc pears (about 3/4 lbs), peeled, halved lengthwise, and cored
  • Cooking Spray
  • 3 tablespoons brown sugar
  • 1/8 teaspoon ground cardamom (Optional) ... I didn't have cardamom, so I used pumpkin pie spice
  • 1/3 cup fat-free caramel topping
  • 1/2 tsp grated fresh orange rind
  • 1/4 tsp greshly ground black pepper
  • 1/2 cup vanilla-bean Greek yogurt
  1. Preheat oven to 400F
  2. Arrange pear halves in an 8-inch square baking dish coated with cooking spray. Bake, uncovered, at 400 for 10 minutes
  3. Combine brownsugar and cardamom (pumpkin pie spice) in a small bowl. sprinkle brown sugar mixture over hot pears. Bake 25 additional minutes or just until pears are tender. Remove pears from dish, discarding syrup in bottom of dish.
  4. Combine caramel topping, orange rind and black pepper, stirring. Spoon yogurt into cavity of each pear. Drizzle with caramel sauce, and garnish with additional orange rind, if desired.
