- 2 Firm, ripe bosc pears (about 3/4 lbs), peeled, halved lengthwise, and cored
- Cooking Spray
- 3 tablespoons brown sugar
- 1/8 teaspoon ground cardamom (Optional) ... I didn't have cardamom, so I used pumpkin pie spice
- 1/3 cup fat-free caramel topping
- 1/2 tsp grated fresh orange rind
- 1/4 tsp greshly ground black pepper
- 1/2 cup vanilla-bean Greek yogurt
- Preheat oven to 400F
- Arrange pear halves in an 8-inch square baking dish coated with cooking spray. Bake, uncovered, at 400 for 10 minutes
- Combine brownsugar and cardamom (pumpkin pie spice) in a small bowl. sprinkle brown sugar mixture over hot pears. Bake 25 additional minutes or just until pears are tender. Remove pears from dish, discarding syrup in bottom of dish.
- Combine caramel topping, orange rind and black pepper, stirring. Spoon yogurt into cavity of each pear. Drizzle with caramel sauce, and garnish with additional orange rind, if desired.
