Zucchini Casserole

This is from my colleague Janice. Ted was skeptical about anything with cooked zucchini, but we absolutely love this! The girls even cleared their plates. It's perfect for that point in the summer where zucchinis are going wild in the garden. 

Zucchini Casserole


1 lb. ground beef or turkey
3-4 cups peeled, cubed zucchini
1 – 8 oz. can tomato sauce
1 can tomato soup
1 tsp salt
½ tsp pepper
½ tsp oregano
½ tsp garlic salt
½ cup shredded cheddar or mozzarella cheese
1 fresh tomato


Brown meat and drain.  Add seasoning, zucchini, tomato sauce and soup.  Warm together in frying pan. Pour into casserole dish, top with cheese and sliced tomato. Bake at 350 degrees for 1 hour. J
