Julia requested tater tot casserole this week. I haven't made it in quite a while, so I did a quick Google recipe search. I found that no one quite makes it like I remember, so I went rogue and just carried on with what I thought would be good. It was delish! I'm capturing it here so the next time I want to make it, I can remember what I did last night. As a note, many recipes add cheese, but I don't.
Tater Tot Casserole
1 lb ground beef
1 medium onion, diced
1 16 oz package of frozen mixed vegetables (green beans, diced carrots, peas, etc.)
1 can of cream of mushroom soup concentrate
Salt and pepper to taste
1 32 oz package of tater tots
Preheat oven to 350. Get out a 9x12 baking dish and set it aside.
In a large pan, brown meat and onion. Add veg and warm them through a bit. Add the can of soup, salt, and pepper, and mix it all together.
Pour the warmed mixture into the baking dish and top with a single layer of tater tots. If they're just dumped on in a jumble, they don't all cook/brown evenly, so line them up nicely.
Bake for 45 minutes.
